First of all my humble apologies for the lack of proper step by step pictures but I was too hungry and busy to record the whole procedure which started to satisfy my needs and not to bring down Instagram hence I only have the above shot.

However, busy as I was shorting out pictures and videos from my last adventure (see previous posts) and hungry like a wolf I managed my best chicken so far hence I'm here to share it with you.
It looks like a plain and simple chicken in the oven and while it's not far from that there's a couple of details that brought it to another level. I was considering marinating it but I was too hungry to wait so I decided to put a tea bag in it. Since I was unsure how the bag will handle 1h+ in the oven I just emptied it inside the chicken. I cut some garlic and mushrooms which also went inside the chicken and put a whole potato on the pan.
Every oven is different hence it doesn't make much sense to just copy numbers but consider that I put it for around 70 minutes in the oven's blower at 200ish C. The oven of the house I stay at the moment is kinda week so this might be 180C for you. In any case go for milder heat and longer time.
I managed to get very crispy skin while the whole thing was done and very juicy. Speaking of juice, the broth this thing produced was way beyond my expectations in both quantity and taste as the mushrooms contributed a lot. The latter were super tasty and flavoured by the fruity tea while the meat got its share too. And just in case some bits of meat from deep inside might feel a bit dry you soak them in the broth and thank me later. Of course you can do the same with the potato though I prefer it with just my extra virgin olive oil, the one I used to lube the chicken before grilling.
I complemented the dish with a mix of mustard and mayonnaise. I usually use Dijonnaise but this time I had a vase of a local producer which matched it even better.
